tax question

i am applying for visa for boyfriend to come to usa. I am a foster mother and am payed by the state so no taxes are taken out of my pay. I also have a private duty client where most of my total income comes from. I am payed privately. My questions: should I claim her as income or just claim the income I get from my state clents?. I heard they will look at bank statements from the past 2 years and they will see my total income is alot more then the 2 clients i am paid for. Im not sure what to do. I just started this process so im not up to the tax part yet. any advice?
