    Me: Naturalized US Citizen living in US.
    Fiancee: Brazil Citizen living in Sao Paulo with Tourist B-2 Visa with record of visiting US dozen times over that last 10 years.

    We plan on getting married in 2016. We just filed I-295F to get her a K-1 Visa.

    What we plan on doing: Get married in the US within 90 days of her getting her K-1 and submit Adjustment of Status I-130.

    What we want to do: Hold a wedding in Brazil so that we can invite her family and friends who cannot come to our wedding in US. Will it be OK to get legally married in Brazil before we hold a wedding in US? Or will this pose problems with her coming to the US on K1 visa to get married?

    Wedding while applying for K1

    I would suggest that you get married after she gets approve for a K1 Visa or after she received it. The embassy checks the marital status while during the process and remember its a fraud applying a K! Visa for a Wife. They have completely different process.
    Another thing, for future reference, after she came to US, you use I-485 to adjust her status. Not I-130. Hope this helps
