If I were to help someone by signing their lease to get into an apartment (this is one of those emergency situations where some feel in danger where currently at) but of course I am not paying, as the tenant would, and I have my own place. So with me just helping by signing, does that affect the visa at all? Will it come up in the interview for the fiancee?

There should not be any issue. No one can say for sure. If it comes up need to give explanation to visa officer.
This is not a legal advice. Use at your own risk.

It might not affect you for your visa right now, there's no way for uscis to know about your lease unless someone tells them. Nevertheless, I don't think it is legal to sign a lease for a place you're not living in or paying for, and it could create a whole lot of problems. Let's say your friend doesn't pay the rent or the water bill, or their significant other burns the carpet by accident. You would be responsible for it and they could demand money or sue you. That would create whole new problems that could end up affecting your visa status.
