    I have started the K-1 visa process. Our plan is to have her come to the US on the K-1, we get married and file adjustment of status for her and her son immediately (first week). When they receive passports back we want to go live in her country for a couple of years (to finish her University).

    Will this be a problem for her coming back to the US? (we will live together during this time).
    Also I know there is some sort of interview around 2 years, can we do this at the consulate in her country?

    Is there any "issues" I need to be aware of?

    Yes there will be a problem. After receiving her advanced parole, she will be able to return to the Ukraine for travel, but cannot remain outside the US for two years. You will then need to file an I-130 to bring her back as your wife and go through Consular processing, which takes longer.
