Waiting for K-1, can we visit each other in another country?

She will be in Romainia, I'm here in US. I do not have alot of vacation and we want to see each other midway through the K-1 process. I was thinking of the possibility of meeting her in Canada, Mexico, or an island nearby. Will she be able to travel to another country or does the fact that she/we are applying for this mean she cant travel abroad until the process is completed?
