My Brazilian fiancé (23 yrs old) did not finish highschool. Will this jeopardize his chances of securing a K-1 Visa?

The K-1 visa is not dependent of his education.

It will, however, make it harder for him to obtain a job in the USA without some kind of diploma equivalent.

In the interview, will he be questioned more due to not having a diploma?

I've also read that it is better for the petitioner to participate in the interview. Could my presence make that significant of a difference regarding their line of questioning? Do we have rights if we're treated unfairly? I am aware, however, that my presence could demonstrate my love for him and my desire to be married to him.

Your presence there may help. But again, the interview and questions will be based on his relationship with you and perhaps previous immigration history, but not his education.
