If you marry the day she enters the USA on her K-1 visa, and file paperwork next day, she should get her work authorization within 90 days. She won't get a SSN until she gets the work authorization, so somewhere between 90-120 days before she can work.

The day after we get married we file for a workers permit and we have to wait 90 days before he can work.... That's for a K1 visa for us

A K1 can apply for a SSN about 10 days to 2 weeks after arrival. They can not work with that number until EAD card is received. My husband's SS card was received in the mail the 21st day he was in the US. Meanwhile you marry and file for AOS/EAD/AP. The EAD cards have been arriving lately for most people in 50-60 days. I've seen some in 30 something days, while others get delayed by RFEs for incomplete paperwork submitted.

A K3 is not allowed a SSN until after the EAD work authorization is received.
