Admittedly, I'm being super-cautious here. Many of the documents listed on the Notice of Action send right before the Green Card Interview are things that you have already submitted. A lawyer we met with told us that no, if the co-sponsor has already submitted documents there is no reason for them to send us brand new paystubs before our interview. Still, I've had lawyers make mistakes and wondered whether anyone had any experiences that confirmed this (or contradicted it).

It's unclear what you mean. Are you going to a green card interview after having submitted a co-sponsor's affidavit of support documentation in the I-485? Now, is your question whether you have to provide updated paperwork at the green card interview?
if so, yes, you will have to bring updated documents (if different). I would still bring all document copies even if they stay the same. But for some things that have been updated, like more-recent paystubs, bank statements, or even updated tax returns should be brought to the interview.--Good luck--
