I'm confused! If I am 125% over the poverty guidelines, I don't have to submit anything except last three years of tax returns? I don't need to provide bank records, property values, etc. even thought the form calls for them? And, I don't receive pay stubs because pay is electronically deposited in bank. Do I still need them? Thanks in advance.

If you are able to show you are north of 125% level without using all other assets you have, then only most recent 1040. You may include other 2 most recent years if you choose to. But, you must nonetheless, write in income for all those 3 years in the space provided. As far as 1040 goes, include all schedules.

DD payroll info is available from your bank statement. That should suffice in lieu of an actual pay stub.

There are two Affidavits of Support I-864 and I-134. You didn't say which you were doing.

Personally I would provide more than one form of evidence of my ability to provide support. Tax return is one form. Get a letter from HR saying your employment status and annual salary. Use bank statements if they indicate the deposits are payroll.
