OFC and visa interview process and Jan 2013 dates

Hi

Could someone help me with this question? With the new process of OFC and Interview date booking, can we reschedule the dates after we have booked the appointment for a certain dates (both OFC and interview)?

I am travelling to Chennai, India on the 9th Jan and returning on 7th Feb. As of now dates for Jan 1st week till 9th and 21st Jan is available. I want dates between 14 - 18th January 2013. Do you think those dates will be available eventually?

Please help.
