H1B Petion Approved in May 5/2015

Hi

Please help me to understand what is the time limit for stamping a H1B visa as a consular process, The I797 said starting date Oct 1 2015 but I was wondering what happened if I stamp the visa in Jan 2016 or later.

There is no time limit. You can go for visa stamping anytime as long as your H1B petition is valid and the job still exist. Visa will be issued until the petition expiry date.
