Traveling/tourist visa after H1B

My (never extended) H1B visa is ending in May 2017 and I will be quitting my job at that time and moving back to Europe. But I would first like to have one last vacation in the US. Is there a way for me to adjust status to a B2 visa or do a visa hop and re-enter on a tourist visa/WVP? What are the odds of that being granted? FWIW, I'm a citizen of one of the Visa Waiver Program countries. I should be able to prove that I have arrangements made to move to Europe.

Advisable to leave and re enter on the VWP.
