H1/H4 stamping in Mexico

My husband is here on H1 and I hold a H4 visa. we both got our new I-797 with extended visa dates and would like to get our passports stamped. I have been trying to find out if we can go for stamping in Mexico or Canada but I keep getting conflicting answers. Could someone please tell me if we can go to either of these countries or to India? If someone has gone to Mexico recently for stamping please let me know.
