Visa stamping in other countries

Hello
We live in bay area. With the stamping condition so bad in India, we are thinking of traveling to some European country and getting stamping done there. Can anyone share their experience in any of the European countries, esp Italy or Greece ?

There are dates available in those countries but since we are looking to get there only around mid-Dec, not sure how the experience will be
