Postpone stamping (how late can I postpone?) - Implication?

I and my wife have H1B and H4 Visa stamping in Chennai on 12th, October (in a week). My sponsor/lawyer in USA was supposed to send the original documents through courier by Oct 1st. But for some totally unexpected reason, it has been delayed. They may courier the documents this weekend.

In case it gets further delayed, HOW late can I postpone my VISA stamping? I mean, can I postpone it as late as Oct 11th or should I do it before (as per rules)?

Does postponing affect my stamping possibility?

I really appreciate any help.

Could you please tell me my postponing the interview dates, does it affect VISA stamping. Shouldn't be but just asking if need to be prepared for something?
