My wife is currently working under L2 EAD which expires soon. We hope to get it extended before the current EAD's expiration date. But if that doesn't happen then can she continue working after applying for EAD extension?

No. In general, a pending EAD application does not provide permission to work, so persons with a pending EAD application cannot work in the USA.
