On the consulate web page it says the applicant must bring a passport whose valid period covers his entire stay in the US plus 6 months. My passport will expire earlier than that, do I have to renew my passport and if so, will the changed passport number affect the process? Since the petition and visa interview appointment both used my current passport number.

Your passport has to be valid for atleast 6 months from the date of interview. You can renew your passport and the visa from old passport is still valid for travel.
If you renew now, it still does not matter. Carry both your old and new passports for the interview. No big deal.

My passport will expire earlier than that, do I have to renew my passport and if so, will the changed passport number affect the process? - In case youu stay in US for long period and if you extend/renew your passport, your passport number will not change. The expiry date will be changed.

In case youu stay in US for long period and if you extend/renew your passport, your passport number will not change. The expiry date will be changed
---- Ther is no doubt that you are mistaken about the Passport issue. When you renew a Passport, the Consulate of your country of origin issues a new Passport and that will have a new number
---- Alternately, if you extend your Passport (and it is the same as renewal) the above condition applies
---- In either case it does not and will not affect the Visa issuance process by the US Consulate
