O1 Visa: dynamic salary?

Hi,
I am currently applying for a O1 Visa and preparing what I should have on my employment letter. See, I work for a startup, our finances are dynamic and so is my salary.

Would it be an issue if the employment letter mentioned $X/month but that I ended up getting paid $X/month only for a few months, and maybe more, or maybe less afterwards. I'm wondering how they can track that.
