Not a legal advice but merely opinion
I would say you should have an option of changing it as an F1 your prime job is to convey that you are proficent in English. However don?t worry as on your I20 at the bottom box below your major it says ?proficeny is required? and if you are proficient it says student is proficient. So I am sure that is what says on your i20. If you can?t change just tell the VO on the appointment date that it was a mistake normally the embassy where I was they were asking English or your language and I said English so if that happens you can just say English and explain it was just an accident and to be on the much safer side I would keep my IELTS or TOEFL test scores.
Only an opinion!
