    I want to leave my current job and join an US institute from which i am getting full scholarship.I am applying for a F1 visa.

    Should I need to have relieving letter from the present employers during visa interview?

    Also, Do I need to have tax document/bank statement during visa interview?

    Are you leaving your job in the US or in another country?
    If in another country, it is not required to present the relieving letter. But for future (H1B, green card) it is advisable to have relieving letter with you.

    Tax returns are helpful in showing that you may be able to pay for yourself in the future, bank statements are required.
