Stem extension after non-stem masters?

I have recently graduated with a non-stem Masters. I am currently working on an OPT which expires July 28th. The company is applying for an H1. In case the H1 doesn't come through I am looking at different backup options.

I was wondering if I can enroll in some some technical course that would enable me to get a STEM extension?


There is no possibility of working on a CPT ( as my employer does not allow it).
