I have just been granted my B1/B2 visa from South Africa to allow me to travel to the states. What procedures do I need to go through now? And if they only determine how long my stay will be once I enter the US how do I know when to book my ticket for a return?

What is your purpose of visit? You book your return ticket according to that. Then they will give you stay according to that.
You must take a return ticket as they can check at airport to make sure you are going back.
