My cousin along with his brother and family are applying for us visa to attend another cousin'a marriage. My cousin has a small restaurant which is not registered. They are mentioning in form as self funding but don't have much balance in their account. If VO doesn't look at any documents how will he get to know about their financial status.

Obviously, he wont come to know without asking, and your cousin and his family will be extremely lucky to get the visa.

But if the officer does ask to see the proof of income, and they cannot provide it, the visa would most probably be rejected, and the income stated in the Interview/DS-160 would be registered and difficult to change in the immediate future. The rejection will certainly affect future applications negatively unless genuine reasons and situation change proof is provided in the future.

I personally would not suggest you risk just on the basis of stroke of luck that the officer wouldnt want to probe the source of income.

Also my cousin is single and he is 28 years old and has been denied visa in 2011.but his brother and family ( wife and 5 years old son) has never applied visa before.
As VO generally doesn't look at the documents so he has to trust the DS160 and whatever a person says in the interview. So they are little confused.. Also in the income in DS 160 says if employed, so that have left It empty as they are not working.
