Change in employer after appointment

Hi,

I have taken visitor's visa interview dates for Dec 15 for my parents and sister. At that time I was employed by some other employer, now I got an offer from another employer that will be in effect from 30Nov.
Please advice if I need to change the documents to reflect my current employer or still old documents will be fine?

I sent employer related document to my family and now I got offer from another employer.
Latest update is the that my hire date for new employer is Dec 12 and my family is going to embassy on Dec 15.

So I cannot send them any documents in this tight timeframe, only 2 options now I have is either let them go ahead with the interview with previous employer documents OR modify the appointment date to Feb or something so that I can collect new documents and send those.

In that case, send whatever you have right now and let them go for the interview with those documents.
