Qn about interview/appointment date

Hi,
I took a consulate appointment online for my mother for Dec.28th of this year. I have been reading on this website that it's not good to go during the end of the month as visa may be rejected. How do I change the interview date now? Is it even a good idea to change it? How do I notify the consulate? Will it cause any problems? I don't believe that one has to undergo such pain to get a visa to this country.
