EOS (B1/B2) and COS (to F1) with second EOS (bridge the gap)

    I have entered the US with B1/B2 visa and filed the EOS for 6 months until December 2020, however, I decided to apply for school for higher education so I filed COS before my requested extension date, and filed another EOS for my B1/B2 to bridge the gap. So I have a total of 3 I-539s pending at the moment. All filed electronically on time.

    - I-539 EOS filed in May 2020: fingerprint was taken in Nov 2020 - Still under process (processing time at California Service Center: 23 Months to 29.5 Months)
    - I-539 COS filed in Dec 2020: filed a few weeks before the original EOS requested date (processing time at Potomac Service Center: 1 Week to 4.5 Months)
    - I-539 EOS filed in Dec 2020: filed a week before the original EOS requested date (processing time at Vermont Service Center: 8.5 Months to 11 Months)

    To be able to change my B1/B2 status to F1, my "status have to remain valid." But because of the USCIS's delay, my status remains "out of status" until I get my 3rd I-539 (requested until June 2021) gets approved. It looks like my COS (2nd I-539) will be processed earlier than my first EOS because the processing speed for each assigned office is different. But if that happens, I'm assuming they will deny my COS because my status is "out of status" regardless of the already filed I-539.

    Should I give up and leave this country? Otherwise, should I remain in the US for another 30 Months just for my first I-539 to be processed?
