Visiting another country on the way to USA

Parents are planning to visit me during Christmas holidays, on the B1 tourist visa.

They are planning to visit Dubai on their way here to USA, by flying to Dubai, spend a few days with family there, and then fly out to Los Angeles from there.

Is it possible to do so? What are the challenges and issues I need to be aware of?

No issues at all, they are free to roam around the world as long as their all required visas are valid.

In fact emirates offers stopovers in Dubai if iam not mistaken 96 hours which can be used and if there is a US visa on Indian Passport then its VOA for them. Wish them a safe trip
