Chinese Citizen living in US with adjustment of status(AOS) still in process. Received my EAD advanced parole combo card recently.

Can I travel to Mexico for vacation? If so, do I need to apply for both a visa and travel card? If so, how long does the process take?

Yes, you need a Mexican visa unless you have an unexpired US visa.
