Adjustment of status doubts

My girlfriend and I are planning on getting married, either in the US or EU.

From what I understood it is possible to get married under a ESTA visa, so my question is, how hard is getting an adjustment of status in the US after the marriage?

What if we get married in EU? Is getting the adjustment of status still difficult?
