Translator

My parents are applying for visitor visa at Mumbai consulate in mid July. I have filled out all the necessary forms/documents. They would like to go for the interview with a Gujarati translator. I would like to know exactly at point do they need to request for the translator.

You can ask for it at the time of an appointment. Otherwise, ask for it at the time of interview.
